Delicious for autumn
Here we are again - shorter days, temperatures drop, you suddenly develop an interest in knitwear - yes, it's autumn. This is a time for slowing down and cosying up, and that goes for your diet too.
Here's a lovely comforting recipe for those autumn evenings.
Corn chowder
Ingredients
1 medium onion, chopped
2 cloves of garlic, finely chopped
olive oil
1 medium potato, chopped into small cubes
1/2 tsp thyme, finely chopped
175g corn
1.2l vegetable stock *
2 tsp fresh chives
(* use chicken stock instead for a blood nourishing hit)
Serves 4
Method
Heat a small amount of oil over a medium heat.
Sweat the onions and garlic until translucent.
Add the chopped potato and the thyme, and slowly stir in the stock.
Cover and simmer until the potato is nearly cooked.
Add the sweetcorn and cook for another 10 minutes.
If you prefer a smooth soup, you can blend it and then strain it to remove the husks.
Add the chives.
