Delicious for autumn

Here we are again - shorter days, temperatures drop, you suddenly develop an interest in knitwear - yes, it's autumn. This is a time for slowing down and cosying up, and that goes for your diet too. Here's a lovely comforting recipe for those autumn evenings. Corn chowder Ingredients 1 medium onion, chopped 2 cloves of garlic, finely chopped olive oil 1 medium potato, chopped into small cubes 1/2 tsp thyme, finely chopped 175g corn 1.2l vegetable stock * 2 tsp fresh chives (* use chicken stock instead for a blood nourishing hit) Serves 4 Method Heat a small amount of oil over a medium heat.
